The Hawthorn Bistro & Bakery is a journey of expression and learning. First opened in the winter of 2017 as a fine dining concept, the ownership quickly realized that fine dining was not the right fit for the location and their personal journey. However, through the baking of the daily bread, a new passion was born. The Hawthorn closed 1 year later and after 4 months of research and development, reopened in February of 2019 as Tallahassee’s only artisan bread focused bakery. The immediate feeling of relief and purpose washed through the staff as they develop more of the southern savory side of the baking world.
